Well season is here and its more than just for pancakes and waffles.....
Lightly brown pork chops in a frying pan,just a bit of color(don't want to dry them out)use a bit of oil.
Same pan;
Smallish onion diced up;
Some apple cider or vinegar about a tbsp(adding some acid,always good for meats)
Tbsp of worchestershire sauce(there them anchovies again,see corjacks stew post)
Chili pepper and pepper a dash to suit of both,along with some salt(not too much, the worch.has soy in it)
Get that going ;we want the onions to get limp(that's what she said)
Add a little water and about 1/4-1/2 cup Maple Syrup get this hot but don't boil it...Just want to blend the flavors and clean the good stuff off the bottom of the pan.
Any grade is OK;B grade is common in the stores;its dark and has a smokey flavor;I'm partial to the A's=light and medium amber.
Put the chops in a baking pan(I have big pigs and fit 4 in a 8x12 non stick baking pan)you want them pretty tight.Pour the syrup mix over them and bake for 30-45 minutes at 375 F.I brush them a couple times during cooking.I cook to temp not time and look for mid 150's for done,they'll hit 160 when resting.162 is considered the magic safe number for pork.You can foil line the pan for easy clean up;and to get the fit tighter between the chops if you are cooking less;but you don't want to drown them,the tops should be able to brown,not boil in liquid.You want them to glaze,not be just cooked.
Some thickin' the pan with some flour;but I don't like it.Another option is to put a bunch of apple wedges on top of each chop,and I love Granny Smiths for this(Cortlands are good too;you want a tart firm baking apple,not something mushy)

Man that does sound good! I'm going to have to try that...
I grilled some pork steaks the other day and it was a definitely nice change of pace. They were very good, thick and juicy.. Grilled them real easy. Don't like dried out meat no matter what it is.
This one sounds like it would really be tasty. Glazed maple syrup...sounds good.
