Simple fresh game sausages

Fresh sausages mean raw meats that need to be cooked,as opposed to cured or smoked sausages.

These also are fine as meatballs and patties,so you don't need to stuff casings if you dont want to.

If you want to make patties and such,I often add a product called Soy Protien Concentrate in my mix as a binder.1 to 2 cups per 10 lb. of meat.It gets sticky and I add as much as required 1/2 cup at a time.

You will not need eggs,breadcrumbs,etc as a binder and you can't taste it.You can actually purchase in a healthfood store very similar product used for energy shakes.Check some labels.

Breakfast;
4 Tb salt; 1 Tb white pepper; 2 Tb rubbed sage; 1 Tb nutmeg; 1 Tb thyme; 1 tsp ginger; 2 cups ice water(dissolve all the spices in water to mix)
10 lbs meat; grind once than again when spices added(game 8 lbs to 2 lbs pork trimmings)

Coarse Bratwurst,This is a great overall eating sausage and my favorite;
This recipe calls for 3 types of meats,I use game(6 lbs),pork(2 lbs),and beef(2 lbs);but 2 is fine,you need some fat for moisture when cooking,but always avoid game fat;for 10 lbs;

2 cups whole milk(ice cold); 3 eggs; 1Tb mace; 1 tsp ginger; 1 Tb pepper; 1 Tb nutmeg; 4Tb salt; 2 cups Soy protein concentrate.

I case this ,brown well, than cook in beer and onions or sauerkraut.Makes good patties for sandwiches too.
